Today’s recipe: a vegan Cheez-It. Heavily modified from http://www.readymade.com/projects/homemade_cheez_its.

Ingredients: 1 cup flour, 1/2 tsp salt, 1/4 cup nutritional yeast, 1 tsp paprika, 4 tbsp cold vegan butter, 3 tbsp water.

Tools: Stand mixer or pastry cutter. Bowl. Fridge. Oven. Parchment paper. Baking sheets. Cutting implement.

Stir together the dry ingredients, then add the butter in chunks and work it until you have a pebbly dry mixture. A stand mixer with a flat beater is the easiest way, or you can use a pastry cutter. Add the water and mix until the dough can be pressed into a single ball. It will be a little on the dry and crumbly side.

Cover and let rest in the fridge for an hour or more.

Set the oven to 375F. Cut a piece of parchment the size of your baking sheet. Split the dough into two pieces, and roll one out on the parchment into a thin square or rectangle. Cut into 1” squares with a pizza cutter or knife. Transfer the dough on the parchment to a baking sheet, and bake for 16-17 minutes, or until the edges brown lightly. Transfer the finished crackers to a baking sheet to cool. Repeat with the second piece of dough.

I haven’t had a batch of these last long enough to find out how long they keep before going stale.
